There comes a time in every cook’s life where writing “100 Different Ways to Cook Chicken” doesn’t cut it. I needed something different, and seeing as I was cooking for a friend who doesn’t like to eat animals with cute faces, I tried tilapia. Ok, I am sorry to be the one person in Kentucky who has a tilapia as a pet. But they are also tasty. Frozen fish also is very economical and even comes pre-seasoned sometimes.
2 tilapia fillets
1 packet of lemon pepper seasoning
1 lb. of broccoli florets
n The fish: Preheat the oven to 375 degrees. Coat each fillet with lemon pepper seasoning. Place tin foil on a baking sheet and spray with non-stick cooking spray. Cook in the oven for 18 minutes.
n The broccoli: In a large frying pan, heat olive oil. Add in broccoli florets and butter. Simmer for about five minutes, stirring constantly, then add a lid and steam for another five minutes. Make sure broccoli is completely cooked (it will turn a bright green color) before serving.
