Salads are a staple in my summer meal plans. They are light enough for the hot weather, but small pinches of seasoning or an added ingredient can make them equally as filling as any other meal. Caesar salads are my personal favorites, but that same taste week in and out can get old. Spicing up an old favorite isn’t hard and — in this case — only takes one or two added ingredients.
Ingredients
4 chicken tenderloins
1⁄4 cup of Mrs. Dash seasoning
1 bag of Romaine lettuce
1 jar of Kalamata olives
1⁄4 cup of deli-style grated Parmesan cheese
Croutons (if desired)
1 bottle of Caesar dressing
1. Preheat your grill. Wash your tenderloins, then use a meat tenderizer to flatten them. Coat them each in seasoning. Put them on the grill for about 5 minutes on either side.
2. Empty bag of lettuce into a strainer, then rinse and pat dry. Separate into two bowls, then combine lettuce, desired amount of dressing, olives and cheese. Mix thoroughly so dressing touches all ingredients.
3. Lay tenderloins across the top of the salad. Sprinkle with excess Parmesan and serve.
