Stuffed pretzel chicken
Stuffing anything automatically makes it classy. So if you are looking to impress, this is the perfect dish for you to start with. It’s quick and easy, and made of things that even kids wouldn’t mind eating. Plus, it’s definitely a meal that two or even three people can participate in making.
2 boneless, skinless chicken breasts
1 bag of regular pretzels
8 slices of thin-sliced ham
4 slices of American cheese
1 bottle of honey mustard
2 tablespoons of olive oil
n Preheat oven to 450 degrees.
n Using a knife, slice the chicken breast almost completely in half. Stop about a half of an inch before completely severing it. Using your hands, open the breast so it is almost heart-shaped.
n Crumble up pretzels. The best way to do this, I find, is to use your cutting board and a meat tenderizer, so the pretzels are very fine and hardly any large pieces remain.
n Coat the outside of your chicken breast in olive oil, then lay in the crumbled pretzels. Make sure to cover the outside of the breast.
n Inside, lay two pieces of cheese and four slices of ham. Then squeeze on honey mustard to your liking.
n Squeeze together the two sides of your chicken breast, almost like a taco, doing your best to keep the stuffing inside. Use toothpicks to secure the chicken and stuffing for cooking.
n Bake for 20 minutes.
